Mildly Spiced Kumera, Coconut & Tomato Soup
"A warming wintry bowl of orange soupy loveliness!"
Ingredients
1 Onion1 Kumera (sweet potato)
1 Tin Chopped Tomatoes
1 Tin Coconut Milk
1 Tablespoon Coconut oil
2 Teaspoons Turmeric
Salt and Pepper to taste
Method
- Roughly chop onion and dice kumera
- Put a medium saucepan on high heat and add the oil, kumera and onion.
- Stir well until all the vegetables are coated in the oil
- Fry until the onion has begun to soften
- Add the tomatoes and coconut milk
- Bring to a gentle boil and turn down the heat to low.
- Add the Turmeric and seasoning
- simmer for a few minutes until the kumera is slightly soft
