Mildly Spiced Kumera, Coconut & Tomato Soup


"A warming wintry bowl of orange soupy loveliness!" 

Ingredients

1 Onion
1 Kumera (sweet potato)
1 Tin Chopped Tomatoes
1 Tin Coconut Milk
1 Tablespoon Coconut oil
2 Teaspoons Turmeric
Salt and Pepper to taste

Method

  1. Roughly chop onion and dice kumera
  2. Put a medium saucepan on high heat and add the oil, kumera and onion.
  3. Stir well until all the vegetables are coated in the oil
  4. Fry until the onion has begun to soften
  5. Add the tomatoes and coconut milk
  6. Bring to a gentle boil and turn down the heat to low.
  7. Add the Turmeric and seasoning
  8. simmer for a few minutes until the kumera is slightly soft
